Party Food: Jalapeno Popper Dip

I found this recipe on one of my many Pinterest searches and it looked like something I just had to try.  It is a great appetizer and really easy to make which I love. The original recipe can be found here at Closet Cooking.

Ingredients:
8 oz package of cream cheese, room temp
1/2 cup mayonnaise
1/2 cup shredded cheddar cheese (I used sharp cheddar)
1/2 cup grated parmigiano reggiano cheese (I used a four cheese Italian blend, use what you can find)
4 oz can sliced pickled jalapenos, drained (I couldn’t find a 4 oz can, only a 7 oz can and ended up using at least 5 oz)
2 fresh jalapeno peppers, chopped
1/4 cup panko bread crumbs
1/4 cup grated parmigiano reggiano cheese (I used a four cheese Italian blend, use what you can find)


Directions:
Mix the cream cheese, mayo, cheddar cheese, parmigiano, and jalapenos in a bowl and mix well.  Pour into a baking dish.  In a separate bowl mix the panko and parmigiano cheese together and sprinkle over the cream cheese mix.  Bake in a preheated oven at 350F for about 20 minutes.  The top should be golden brown and the cheese should be bubbling and thoroughly melted.


Serve with tortilla chips or if you want to be somewhat healthy you can use celery sticks.  I made this several times already and it’s been a popular dish eat time.  I’m definitely looking forward to sharing it with my girlfriends who like things on the spicy side of life.  You know who you are girlies!  Thank you Kevin for a great recipe!
