I am a big fan of finger foods and my crock pot and when I can put the two of the together to make a great meal for my family I feel like a mom-hero! This Disney Moana movie inspired recipe is sweet, slightly spicy, and full of flavor and perfect for your next party.

Crock Pot Recipe

I am not one of those people that only bust out my crock pot during the winter. That sucker lives right on top of my refrigerator so I can grab it in a flash when I feel so moved. One of the beauties of using a slow cooker and is there is usually very little prep involved. Most of the dishes I make it in are dump and ditch. I dump the ingredients in and then let the pot take care of the rest.

Since I had picked up the last two strawberry guava jam jars at my local World Market I felt inspired to create something using the jam. After shopping my frig and cupboards I came up with a winning combination (according to my husband) and am happy to share it now with you! I think this is great for a luau or tropical themed party but even if you aren’t going tropical I think your guests will appreciate the unique flavors. With SuperBowl coming up this weekend I might just do this all over again for the big game.

How to make Strawberry Guava Jam Crock Pot Chicken

Strawberry Guava Crock Pot Chicken Recipe

Yield: 12

Ingredients

  • 2 lbs Chicken breast, skinless chicken breasts, cut into large chunks
  • 1 Maui onion, small, sliced
  • 2 Limes
  • 19 tbsp Strawberry guava jam
  • 1/4 cup Soy sauce
  • 1/4 cup Apple juice
  • 1/4 cup Water
  • 2 tbsp White vinegar
  • 1 tbsp Ginger paste
  • 1 tsp Garlic paste
  • 1 tbsp Ground cumin
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/8 tsp Cayenne pepper, ground
  • 3 tbsp Cornstarch, made into wet paste
  • 1 tbsp Olive oil
  • 12 Hawaiian rolls

Instructions

  1. In a medium bowl combine all ingredients except for chicken. Whisk together until well mixed.
  2. Place chicken chunks in crock pot along with onion slices, then pour mixture over chicken. Stir until chicken and onions are well coated.
  3. Cover and cook on high for about 2-3 hours or low about 4-6 hours. Stir occasionally to coat.
  4. When chicken is moist and cooked through take two forks and pull chicken apart til no more chunks remain.
  5. If the mixture is too wet, make a paste out of the cornstarch using equal parts water and cornstarch, and then stir into chicken mixture. Let cook another 30 minutes on low. Chicken mixture will thicken. Repeat until desired thickness. You don't want to add too much cornstarch as the chicken should be a bit "wet".
  6. Serve hot on Hawaiian rolls.
